Cinnamon Baked Oatmeal

Oatmeal is an amazing food. It’s healthy, satisfying, and economical. You can use it in smoothies, cookies, breads, etc.  I don’t really care for the taste of cooked oatmeal, but one of my favorite breakfasts is this recipe for baked oatmeal. Our whole family loves this yummy breakfast dish, and it can be made in a snap. Make sure to start it the night before!

Mix together 3 cups uncooked rolled oats and 1/4 cup yogurt, milk, or kefir. Let sit at room temperature overnight. The next morning, preheat your oven to 350 degrees.

Add to oatmeal mixture:
1/2 cup oil (we use melted coconut oil)
3/4 cup honey
2 teaspoons baking powder
2 eggs
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon vanilla

Spread into a greased 9 x 13 pan. Sprinkle with additional cinnamon and bake at 350 degrees for 25-35 minutes, until set and nicely browned. Serve warm with milk and fruit. One recipe serves about 6-8 people, depending on how hungry you are! Enjoy on one of these cold winter mornings!

    Oh yum,Brooke! This sounds so good! I love baked oatmeal! :) Now I have another thing to add to the breakfast menu! Does anyone else ever tire of trying to come up with more variety in breakfast foods? :) This will surely be welcome by our family!! Thanks for posting!     Thanks for posting Brookie! We might try this recipe! We make plain baked oatmeal, and top it with apple butter, but this one looks a little different, so it will be fun! =)

    Oooh! Baked oatmeal is one of our favorites! I also like it much better than regular cooked oatmeal. :)

    Have you ever made it ahead of time and then heated it up in the microwave or reheated it in the oven? I won’t eat a whole batch by myself, but I’m anxious to try it, it sounds delicious!!!!

      Hi Maria! Yes, this keeps very well in the fridge, and you can easily reheat it in the microwave. That’s what we do with leftovers. I hope you enjoy it! :)
